Watermelon Mint Salad 

This makes a light snack or side dish for hot days. 
During the summer season, Ayurveda encourages light, hydrating, and refreshing foods that help you feel cool and nourished. This simple Watermelon Mint Salad combines naturally juicy watermelon with bright lime, fresh mint, and aromatic fennel for an easy warm-weather dish. 

Ingredients 

  • 3 cups watermelon cubes  

  • Fresh mint leaves  

  • Juice of ½ lime  

  • Pinch of toasted fennel seeds  

Instructions 

  1. Combine watermelon and mint.  

  1. Drizzle with lime juice.  

  1. Sprinkle fennel seeds on top.
