A soothing and nourishing Carrot Ginger Soup, infused with herbal goodness to support digestion and overall wellness.

Carrot Ginger Soup 

Ingredients: 

  • 1 tbsp ghee 

  • 2 cups chopped carrots 

  • 1 tsp freshly grated ginger 

  • Salt to taste 

  • Pepper to taste 

  • 3 cups vegetable broth 

  • 1 bay leaf 

  • ½ cup coconut milk 

Directions: 

  1. Heat ghee in a non-stick pan over low heat until melted. Add carrots and ginger, then sauté for a couple of minutes. 

  1. Pour in the broth and bring to a high heat for 5 minutes. 

  1. Add the bay leaf, salt, and pepper to taste. Reduce heat to medium and let simmer for 20-25 minutes, until the carrots are tender. 

  1. Blend the soup in a blender until smooth. 

  1. Add coconut milk and blend again until fully combined. 

  1. Adjust salt and pepper if needed. 

  1. Garnish with cilantro before serving.
