Carrot Ginger Soup

A soothing and nourishing Carrot Ginger Soup, infused with herbal goodness to support digestion and overall wellness.
Carrot Ginger Soup
Ingredients:

1 tbsp ghee
-
2 cups chopped carrots
-
1 tsp freshly grated ginger
-
Salt to taste

Pepper to taste

3 cups vegetable broth
-
1 bay leaf
-
½ cup coconut milk
Directions:

Heat ghee in a non-stick pan over low heat until melted. Add carrots and ginger, then sauté for a couple of minutes.

Pour in the broth and bring to a high heat for 5 minutes.

Add the bay leaf, salt, and pepper to taste. Reduce heat to medium and let simmer for 20-25 minutes, until the carrots are tender.

Blend the soup in a blender until smooth.

Add coconut milk and blend again until fully combined.

Adjust salt and pepper if needed.

Garnish with cilantro before serving.
